Description
Peach halves in various types of syrup as per their quality and following table. The peach halves come from sound, healthy, wholesome, undamaged, washed peaches (prunus persica L.). The product is also prepared from freshly harvested and properly ripened fruit from the Greek territory. The peach halves are obtained after washing, pitting and stone removal, sorting, peeling with heating and caustic solution application, washing, optical sorting, manual sorting, filling in the cans, weigh inspection, de-aerating, addition of syrup, seaming with steam flow closure. Then the final step is the product pasteurization in atmospheric pasteurizer at a set temperature and a certain holding time, followed by the cooling stage, the removal of the superficial water by air blowers. Finally, the cans are palletized and stored for three weeks as an incubation time at ambient conditions prior to their release for labeling and loading.
